I had someone repost from my blog today. I was surprised. That's never happened before. I guess I should take it as a complement? 🙂
I have only a few minutes before needing to pull out the leftovers from the fridge. Thursday is generally our leftover day... though last week I surprised my husband with making General Tso's chicken... his new favorite. It's not entirely paleo but I make it close and we never decided to do it 100%. It's actually an easy recipe. But this week the fridge is full of leftovers.
I went grocery shopping today and spent almost the entire week's worth of money alloted for groceries. I haven't done that in awhile... but there were some extra's in there with my daughter coming home and quite a bit of cheese for some dishes I'm making this week (again, not Paleo) that I haven't made in awhile... spaghetti pie (I'm making a triple batch of sauce for the freezer) and broccoli salad with cheese and bacon for a 'picnic' we'll be attending on Sunday.
My little guy is very demanding these days. He is constantly demanding snacks and seems to have the expectation of receiving them instantly. It's hard to keep patient AND get work done.
I'm trying desperately to try to figure out a schedule that will allow me to write here more often and considering dusting off some of the old manuscripts.... in the back of my mind I'm wondering if I should rejoin SCBWI... as possible motivation to keep up with it but then wondering if it will just infuriate me more if I can't.
Oh well.... time is moving along and I need to check and make sure DH is up to get ready for work and heat up those yummy leftovers! I am looking forward to the leftover Greek Hotplate (stirfry) I made a couple days ago... ground lamb, eggplant and lots of tomatoes with a bit of oregeno and marjoram all over cauliflower rice. 🙂
